Precise, Evocative, Rooted in the Season

Chef Sellas

Chef Paul Sellas

A graduate of the Culinary Institute of America, Executive Chef Paul Sellas brings more than fifteen years in acclaimed fine-dining kitchens — from Café Boulud in Palm Beach to a Four Seasons resort in Scottsdale — to Belle Meade.

His cooking is precise but never fussy, built on close relationships with local farms and purveyors. The result is fine dining that still feels like a neighborhood restaurant: serious about the craft, never stuffy about the experience.
